Our staff of lab professionals, brewers, and consultants have many years combined experience in both craft brewing and big beer.

Kathinka Labs is a TTB certified lab. We perform tests according to industry standards and our staff are proud members of the Institute of Brewing & Distilling (IBD), the American Society of Brewing Chemists (ASBC), the Brewers Association (BA), and the Master Brewers Association of the Americas (MBAA).

Meet Our Team


Mary Burge – Lab Director & QA Consultant

Mary is a University of Illinois at Urbana-Champaign graduate with her Bachelors of Science in Food Science.  Mary began her career as a group manager in the Quality Department at Anheuser Busch in 2003, and was fortunate to transition into many disciplines, roles, and breweries throughout her 10-year career at Anheuser-Busch. Mary’s work at Anheuser-Busch included brewing, brewing engineering, and work in the Quality Departments in New York, Missouri, Virginia, and Ohio.  In 2014, Mary moved to Colorado to work with Leprino Foods as a Quality Supervisor, overseeing the Nutrition Quality Analysis Lab and Micro Lab. In this position, Mary focused on laboratory process improvements, implementation of new analytical equipment, and statistical process control.  In 2016, Mary joined Kathinka Engineering to start Kathinka Labs, a high-quality analytical laboratory for brewers, maltsters and distillers.  Her primary goal is to provide accurate results and quality insight for the craft and local industries so they can build and improve the quality assurance of their products. Mary is married to Travis Burge and they live with their three children in Fort Collins, Colorado.

Floris Delée – Brewmaster, Process Engineer & Consultant

Floris started his career in brewing as an intern at the Alken Maes Breweries in Waarloos, Belgium. During this time, he was also studying to become a Brewmaster and Brewing Engineer in his hometown of Antwerp, Belgium. After completion of his studies, he traveled to the U.S. to visit friends, when he was offered a brewing position at New Belgium Brewing Company. At the time, New Belgium was a very small craft brewery, producing 3,000 hl of beer/year. Floris also worked as a Brewmaster for Dogfish Head Brewery in Delaware and as a Brewing Engineer for the Anton Steinecker Maschinenfabrik, GmbH in Freising, Germany. This extensive experience led Floris to open his own design and consulting firm, Kathinka Engineering, based in Fort Collins, Colorado. Floris also teaches at Colorado State University’s Fermentation Science and Technology Program. Floris is married to Christine Perich and they live with their children in Fort Collins, Colorado.

Jonathan Carpenter – Senior Artisanal Beverage Consultant

Jon’s career in beer began as a summer brewing intern at Drakes Brewing Co in the early 2000’s while attending UC Davis, studying Brewing Science. After graduating with a BS in Food Science Technology (Brewing Emphasis) and a BA in Political Science, he went on to work for Anheuser-Busch in their Research Pilot Brewery. The 18bbl brewing system there cranked out over 1,000 brews per year with a small devoted staff helping to evaluate brewing processes, raw materials, and new product development. He then moved on to manage brewing process and reliability at another Anheuser-Busch brewery in Merrimack, NH where he remained until 2010, leaving to return to the craft beer side of the industry.

Jon’s next post in the beer world came as the Assistant Brewmaster for Dogfish Head Craft Brewery, overseeing day-to-day operations at the production brewery in Milton as well as recipe development and operations at the DFH brewpub in Rehoboth Beach, DE.

In 2011, Jon left Dogfish Head to return to his home state of California taking a role as one of the founding partners of and Brewmaster for Golden Road Brewing in Los Angeles, CA. He oversaw all brewery engineering and design, new product development and operations, staffing, training, and construction/installation of both a 15bbl pilot system and 50bbl production brewery there within the first 18 months of operations. In 2013, Carpenter left his partnership with Golden Road.

Shortly thereafter, Jon signed on with Alchemy and Science Brewing Collaborative as Brewmaster. Over the next 4 years, he oversaw the 5 companies making up the collective – Angel City Brewery in Los Angeles, Concrete Beach Brewery in Miami, Coney Island Brewery in Brooklyn, Traveler Beer Company, and The Just Beer Project, including contract brewing operations in Cincinnati, OH and Breinigsville, PA. During that time, he was also able to design and oversee construction of two ground-up brewery builds – a 10bbl pilot brewery in Brooklyn and 20bbl small production brewery in Miami, as well as the expansion and buildout of Angel City Brewery in LA. In early 2017, Jon left his role as Brewmaster for Alchemy and Science. He currently lives in Los Angeles, CA.

Megan Maiolo-Heath – Vibe Manager

Megan’s marketing, communications, website design and business development experience began within the international development world, where she worked seven years as a Marketing Manager for an environmental nonprofit working throughout Central America. She joined Kathinka Engineering to help launch and manage the business service side of Kathinka Labs, where she is responsible for quick and effective communication between our customers and the Lab as well as managing our website.  Megan lives with her husband, Jared Heath, and their two dogs in Fort Collins, Colorado. They are both avid homebrewers and outdoor enthusiasts.

Lauren Sandell – Lab Technician

Lauren is a recent graduate of Colorado State University, and earned summa cum laude in a B.S. in Fermentation Science and Technology and a minor in Food Safety. During her time at CSU, she was involved as the President of the Food and Fermentation Science Club, served as a Teaching Assistant for a Brewing Processes course, acted as a tutor and mentor for international students, and interned with three different food/beverage companies. She is enthusiastic in fields relating to kombucha, beer and brewing, microbiology, winemaking, food science, and fermentation.

Leslie Wright – Synergy Manager

Leslie recently joined the team providing administrative and project support to Kathinka Engineering and Kathinka Labs as well as striving to provide our clients with the best customer support possible. Leslie graduated from CU Boulder with a degree in Advertising.  She’s a Colorado native who recently returned to the area from Boston. She brings years of experience in business development, marketing & communications and event planning to Kathinka. She is thrilled to be part of an amazing team in this exciting and growing industry. Leslie is married to Justin Wright, a fellow beer lover and Certified Cicerone. Together they enjoy cooking, home brewing, traveling and appreciating fine food and craft beer with friends. Bryan Shears- Lab Technician Intern

Bryan is a University of Wyoming graduate with a Bachelor’s of Science in Mechanical Engineering. While at the University of Wyoming, Bryan received an Engineer in Training Certification (EIT) upon passing the Fundamentals of Engineering Exam. After graduation, Bryan spent four years as a mechanical engineer in the petroleum industry for Packers Plus Energy Services. Bryan is currently a student at Colorado State University in Fermentation Science and Technology.
